She has been cooperative.
Running at 412 all week. First crack coming in around 9:20 on the Lintong, which is where she likes it. She sulked Wednesday morning when it rained but Della got two batches done before noon anyway. The Sidamo is lighter than usual because of it. Della says that is fine.
Roasted to order when we can manage it. Allow 1 to 2 days.
A tally, not a checkout. The National keeps the count and rounds to the dollar. Bring it to the bar.
Pick a coffee off the bar and how you are brewing it. The grinder is the same tight-burr machine Della dials in every morning, and a darker roast grinds finer than a light one at the same setting. This is where she would tell you to put it. She would probably also tell you to trust the cup over the dial. Both things are true.
A starting point, not a law. Beans shift as they rest, and every grinder reads its own numbers. Della trusts the cup over the dial, and so should you.
